Healthy Greek Frittata without the olives :)
Enjoy a nice and easy to make Greek Frittata this weekend. Make a ham tonight for dinner and save some for this delicious breakfast or Hey, make it for dinner! What family doesn't love breakfast for dinner! You won't be disappointed 😁
**You can also use Ham from the deli
**If you bake a ham in the oven save the ham bone for a nice ham and split pea soup. My Grandma used to make the best ham and split pea soup!
Heat oven to 400 🔥
12 Large Eggs 🥚
4 ounces of Feta cheese or Fat free Feta cheese (crumbled) 🧀
1/3 grated Parmesan cheese 🧀
1 tsp of dried oregano
1 tsp of salt 🧂
1 tsp of pepper
3 tablespoons of olive oil
1 garlic clove minced
1 package of fresh spinach ( large container) steam the spinach, squeeze dry, and chop
7 ounces of ham, cut into very small pieces ( this recipe can also be used with crumbled turkey sausage)
Directions:
In large bowl mix eggs, feta cheese, Parmesan cheese, oregano, salt and pepper
Heat oil to medium heat in a ovenproof skillet, make sure it is nonstick. Add garlic for about 4-5 mins or until golden brown. Add spinach cook for another min. Add ham and stir just enough to have ham mixed with garlic and spinach. Add the mixture of eggs and cheese. DO NOT STIR. Let eggs sit until eggs start to set around edges, takes about a min.
Transfer pan to oven and bake until it is set and puffed. 10 to 15 mins. Let cool slightly and transfer it to a dish to serve on. Cut and enjoy
